Gingerbread Cupcakes with white chocolate buttercream- Recipe


Here is my recipe for delicious gingerbread cupcakes with white chocolate buttercream. This is one of my families favourite Christmas treats. Perfect for Christmas Eve!

Gingerbread Cupcakes with White Chocolate Buttercream

Makes 12

145g flour
2 tsp ground ginger
1/2 tsp ground cinnamon
1/4 tsp Bicarbonate of soda
1/4 tsp salt
1/8 tsp ground cloves
1/8 tsp ground nutmeg
100g granulated sugar
1 egg
110g black treacle
4 Tbsp unsalted butter, melted
1 Tbsp vegetable oil
125ml buttermilk

White chocolate buttercream

150g butter
150g icing sugar
100g double cream
200g white chocolate chips

1. Preheat oven to 160°c. Whisk together the flour, ginger, cinnamon, bicarbonate of soda, salt, cloves, and nutmeg and set aside. In a large bowl, whisk sugar, egg, black treacle, butter, oil, and buttermilk. Add the flour mixture to the wet mixture and whisk until just combined.

2. Divide the batter into cupcake cases and bake until just set and a toothpick inserted in the centre comes out clean, about 14 minutes. Allow to cool.

3. Meanwhile for the white chocolate buttercream, heat the double cream in a saucepan until just boiling, then remove from the heat. Pour the cream over the white chocolate and stir until the chocolate has melted and the mixture is smooth. Set aside to cool.

4. Cream the butter and icing sugar together in a bowl until light and fluffy. Stir in the melted chocolate mixture.

5. Pipe the white chocolate buttercream onto the cupcakes.

Snowflake cupcakes delivered to Low Wood Bay for their annual 'Spirit of Christmas' event. Where elderly guests from the local community enjoy Christmas festivities and afternoon tea. It was lovely to be involved with this very special event this year!

Pantone Colour of the Year 2016



For the first time a blend of two colours has been chosen as Pantone's colour of the year. Rose Quartz and Serenity have been chosen as the PANTONE Colour of the Year.


Pantone explains 'Rose Quartz is a persuasive yet gentle tone that conveys compassion and a sense of composure. Serenity is weightless and airy, like the expanse of the blue sky above us, bringing feelings of respite and even in turbulent times.' 


I'm looking forward to combining serenity and rose quartz in some of my new wedding cake designs. The colours are perfect for weddings!

Here is my new project which is featured in the magazine. The cake was inspired by The Nutcracker Ballet 'Waltz of the snowflakes'. Inside the magazine you will find a full step by step tutorial for creating this cake. 


The design features dancing ballerinas with snowflake tutus, falling snow and a tier of blue and white ruffled tutus.

As a regular contributor to Cake Craft Guides- Wedding Cakes & Sugar Flowers Magazine and Party Cakes Magazine, I was very excited to hear the theme for issue 24! The issue is all about fashion inspired cakes!                                      I was given the task of designing a cake inspired by a Zuhair Murad gown. After looking through some wedding gowns, I quickly found a gown that I loved! Zuhair Murad's 'Tiana' gown with its sequins and floral embellishments became my design inspiration.

Here is the completed design, beautifully photographed by Melissa Beattie photography. The design features sequins, chocolate jewels and embellished flowers.
